Tray Bocuse d’Or 2017
To design a plateau for the Bocuse d’Or requires knowledge of the competition, the history of international cuisine and technical skills of haute cuisine. The plateau project refers to the piedmontese landscape with level variations, hills, hollows, reproduced by the various aluminum layers. The territory as a source of inspiration for the representation of the gastronomic project of chef Paolo Griffa.
